Republic Day 2023: Republic Day is very special to every Indian. While the day begins with flag hoisting in the morning, we spend the day leisurely, having a quality time with family and friends. The country has a diverse food culture and people are spoiled for choices from Kashmir to Kerala, from Gujarat to Nagaland. On this R-Day, we bring to you five special dishes to make the occasion more special. These dishes have been made in tricolor as patriotism is the fervour of the day.

Tri-Colour Burfi  

Ingredients

1 teaspoon ghee

1/4 cup milk

1 milk powder bowl

3 teaspoon sugar or as per your taste

50 gram paneer

1/4 teaspoon cardamom powder

2 teaspoon fresh cream

2 orange food color drops

2 green food color drops

INSTRUCTIONS

Heat ghee in a pan, add milk and milk powder and mix well.

Add cardamom powder, sugar, paneer and fresh cream. Stir it constantly till it attains thick consistency. Switch off the flame and let it cool.

Divide the barfi mixture in three equal parts. Mix green and orange colors in the two parts and leave the third one white.

Now spread green barfi mixture in a greased thali, spread white barfi mixture over it and then lastly spread the orange mixture.

Set for 5 minutes and cut it into your favorite shapes.

Tri-Colour Sandwich 

INGREDIENTS

3 bread slice (while / wholemeal)

 tsp green chutney

few lettuce leaves

1 cheese slice

½ tsp pepper (crushed / powdered)

1 tsp mayonnaise sauce (eggless)

1 medium sized carrot (grated)

salt to taste

INSTRUCTIONS

Cut the sides of 3 white or wholemeal bread. use sides to prepare bread crumbs by just grinding into fine powder.

On one bread slice, apply generous amount of green chutney.

Layer it with lettuce leaves for green layer. alternatively use sliced cucumber for green layers.

Follow by a cheese slice and crushed black pepper.

Place another slice of bread to get white layer.

Spread mayonnaise sauce generously. alternatively, use butter if required.

Spread grated carrot forming the orange layer.

Season with some salt and crushed black pepper.

Place the third bread slice and press gently.

Cut the sandwich into half forming triangle.

Serve tiranga sandwich or three layered sandwich to kids in their snack box.

Tiranga Halwa 

Ingredients

For Green Pea Halwa:

1 cup Green peas puree

1 cup Milk6 tbsp Sugarite (sugar free)

2 tsp Ghee

Cardamom powder for garnishing

Dry fruits

For Cucumber Halwa:

1 cup cucumber

1 cup Milk

1 tbsp Khoya

6 tbsp Sugarite

2 tsp Ghee

Cardamom powder for garnishing

Dry fruits

For Carrot Halwa:

1 cup Carrot (English carrot), grated

1 cup Milk

6 tbsp Sugarite

2 tbsp Ghee

Cardamom powder for garnishing

Dry fruits

INSTRUCTIONS

Green Peas Halwa:

Wash and blanch the green peas, run through the cold water and make a puree.

Heat ghee in a wok and add the green pea puree, saute for 5 minutes and add milk, sugarite, khoya, and stir till it forms a thick mixture. Keep stirring to avoid sticking.

When done, remove and arrange in a plate at the bottom side.

Cucumber Halwa:

Wash and peel one cucumber. Grate it and squeeze out the water.

Heat ghee in a wok and add the cucumber to saute for 5 minutes.

Add milk, sugarite and keep stirring. Once the milk dries up, add khoya and mix well till it starts to make a thick mixture.

Remove when it is done and arrange in the plate for the white layer.

Carrot Halwa:

Wash, peel and grate the carrot in a bowl.

Heat ghee in a wok and add the carrots to saute for 5 minutes.

Now add the milk and sugarite to it. Stir till it forms a thick mixture. Keep stirring to avoid sticking of the mixture.

Remove and arrange this above the cucumber halwa i.e the white layer.

Your Tiranga halwa is ready. Garnish with dry fruits of your choice.

Tiranga Dhokla

Ingredients       

For sooji/rava/semolina batter

2 Cup sooji/semolina/rava

2 Cup curd

1 Cup water

For Green layer

½ teaspoon salt

⅛ Cup water

½ teaspoon baking soda

2 Pinch green color

½ teaspoon sugar

For White layer

½ teaspoon salt

⅛ Cup water

½ teaspoon baking soda

½ teaspoon sugar

For Saffron layer

½ teaspoon salt

½ teaspoon baking soda

2 Pinch saffron color

½ teaspoon sugar

⅛ Cup water

Instructions

In a mixing bowl take sooji, water, and curd. Mix well and keep it aside for 20-30 minutes.

Divide this batter into three parts for each layer

Green layer: In a separate bowl take one part of the basic batter. Combine all ingredients listed under green layer.

Grease a dhokla plate and heat the dhokla cooker. Pour this green batter into the plate and steam for 10 minutes.

White layer: Mix all the ingredients listed under the white layer. After 10 min pour this white batter over green layer. Steam it for another 10 min.

Saffron layer: Mix all ingredients listed under saffron layer. After 10 min pour this batter over this white cooked layer. Steam it for 10 min.

Switch off the flame and rest it for some time. Let it cool down for a few minutes. After cooling down, dhokla will come out easily from the plate. Prepare for tempering and spread over it. Now serve.

Tiranga mocktail

Ingredients

Kiwi crush: 20 ml

Lime juice: 15 ml

Saffron cordial: 10ml

Whipped cream

Fanta drink

Instructions

Put kiwi crush, lime juice in a shaker and shake well, pour into chilled coupe then make a thick layer of vanilla essence mixed whipped cream in glass. Finally, add fanta over whipped cream.

Garnish with purple edible flower.
