The viral video features a man who shares a step-by-step method to make curd using green chillies. He begins by saying, “In many cultures, people set curd using green chillies – and many of us had no idea! I myself didn’t know until a student once told me that curd can be set using green chillies. I was surprised because, in my home, we’ve always used curd to set more curd since childhood.”

He further shares, “About a month ago in class, a student mentioned, ‘Sir, we use green chillies to set curd at home. I said, – Are you serious? He insisted, and when I asked the rest of the class, a few others said the same. That got me curious.”

Then comes the science: “It turns out that the stem of a green chilli contains certain types of bacteria, like lactobacillus, which help ferment milk. Here’s how it works: take half a litre of lukewarm milk, break the stems off three green chillies, and drop them in. You can also add the whole green chillies along with the stems. The lactobacillus bacteria from the chilli stem multiply in the milk and produce lactic acid, which leads to the curd setting. Amazing, right?”
