Hariyali Teej 2023: Hariyali Teej, a joyous festival celebrated by married and unmarried women across India, is just around the corner. This auspicious occasion marks the onset of the monsoon season and is dedicated to the worship of Lord Shiva and Goddess Parvati. Apart from the traditional rituals, one of the most anticipated aspects of Hariyali Teej is the delectable food that is prepared and shared with family and friends. This year, why not add a touch of sweetness to the festivities by cooking up a batch of delicious Kesar Malpua for your loved ones?

The Significance of Hariyali Teej 

Hariyali Teej falls on the third day of the bright fortnight of the lunar month of Shravana. It is a display of nature's beauty, represented by the green vegetation that glitters around us. Women traditionally wear bright green dresses, adorned with intricate henna designs and offer prayers for husbands' good health and the triumph of their marriage.

Here's a simple recipe to prepare Kesar Malpua at home and spread joy among your loved ones:

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup milk powder
  • A pinch of saffron strands (kesar)
  • 1/4 teaspoon cardamom powder
  • 1 cup milk
  • 1/2 cup sugar
  • Ghee (clarified butter) for frying

Instructions

  1. Soak saffron strands in 1 tablespoon of hot milk in a shallow bowl. In doing so, it will add the great color and taste of saffron to milk.
  2. Mix the all types of flour, purpose milk powder, cardamom powder and saffron infused milk into a mixing bowl. Mix well.
  3. Take a little bit of milk and add it, stirring until you've got the perfect batter. Let the batters take a break for about 20 minutes.
  4. In a separate pan, heat ghee for frying the malpuas. The ghee should be moderately hot.
  5. Pour a ladleful of the batter into the hot ghee to form a small pancake. Fry until both sides turn golden brown. Make sure the malpua cooks evenly.
  6. Remove the fried malpua from the ghee and let it drain on a paper towel to remove excess oil.
  7. In another pan, prepare sugar syrup by dissolving sugar in water. Let it simmer until the syrup thickens slightly.
  8. Dip the fried malpua into the sugar syrup for a few seconds, ensuring it soaks up the sweetness.
  9. Garnish with chopped nuts, saffron strands, and serve warm.
