Kulfi Ice Cream

Ingredients

200ml sweetened condensed milk (cold)

2 cups whipping cream

2 cups pistachios

2 teaspoons vanilla extract

2 pinch saffron

1-2 teaspoon cardamom powder

Method

In a small bowl put the saffron threads with 1 tablespoon of warm water. Put it aside.

Keep sweetened condensed milk cold by putting it in the refrigerator.

Using a hand mixer or a stand mixer with the whisk attachment, beat cold heavy cream on medium speed until stiff peaks form.

Reduce the speed a little and combine the whipped cream with the condensed milk and vanilla essence.

Increase the machine’s speed once more and beat the mixture until firm peaks form.

Add the ground pistachios, cardamon, and saffron-infused liquid to your ice cream base now that it has been prepared. Mix everything at a medium speed until it’s all distributed equally.

Scoop and serve your ice cream after freezing it in a container for at least 6 hours or overnight.

Chocolate Cake

Ingredients

2 cups all-purpose flour

1 ½ teaspoon baking powder

1 ½ teaspoon baking soda

2-3 white sugar

2 tbsp cocoa powder

Salt (as per taste)

2 eggs

1 cup milk

1-2 tbsp of vegetable oil

2 teaspoons vanilla extract

Method

Combine the sugar, flour, cocoa, baking powder, baking soda and salt in a large bowl.

Add the eggs, milk, oil and vanilla. Use the mixer at medium speed for 1-2 minutes. To thin your cake batter, add some warm water.

Set the oven’s temperature to 350 F (180 C). Take two round pans and grease them, and then fill those with the batter.

Bake the cake for 35 to 40 minutes in the preheated oven. Use a clean toothpick to check if it’s properly cooked or not.

After 10 minutes, put the pans on a wire rack to finish cooling. Once it is cool, take out the cake and serve it.

Mango Halwa

Ingredients

2 cup mango puree

1/4 cup sugar

1 tbsp cardamom powder

1 tbsp saffron

3 tbsp ghee

8-10 cashews (chopped)

8-10 pistachio (chopped)

Method

Cook mango puree for two minutes on a medium nonstick pan.

Add the sugar while cooking over a low flame. When sugar is added, the mixture first becomes fluid before beginning to thicken.

When it begins to thicken and stick, add 1 tsp ghee after a few minutes. Continue to stir while cooking on a low flame.

Add ghee to the mix and continue cooking (if it starts to stick).

It will eventually join together and start to roll like a ball. Bring everything together after adding the remaining ghee. You can now observe the glossy halwa look, which is the ideal stage.

To add cashews to the halwa, fry them in 1/2 teaspoon ghee till they turn golden brown.

Stir quickly, then turn off. Serve the mango halwa warm or hot.
